Recipes?

I really don't like to cook.

I much prefer other people cook for me.

I know. I'm a brat.

But this whole weight-loss thing has got me thinking about getting a little better about that.

So can anyone recommend some tried-and-true healthy recipes?

And the simpler the better, when it comes to both ingredients and time. (Just so you know who you're dealing with - Rachel Ray's 30-minute meals usually take me about an hour or more.)

Mel's got one here for veggie chili, although I may need a chemist to help me figure out how to halve the ingredients. :)

In my house, we're big fans of the crock pot for keeping it simple & healthy. On the weekend, we'll cook up 6 or 8 boneless chicken breasts with a cup of water & a few cloves of chopped garlic in the crock pot. Once cooked, we put the whole thing in the fridge and eat off of it all week.
Warm up & shred a breast or two one night with some peppers, onions & salsa for Mexican night. Same thing, but with some tomato sauce, oregano & spaghetti squash for Italian night. Same thing, but with some broccoli & coarse ground mustard another night. With the chicken already cooked, it makes it really easy to get something good on the table quickly after work during the week.

You know what we do? We make the big pot of veggie chili, then freeze it in individual portion sizes. Just make sure your container is the right size for your portion without a lot of room left over. You could probably even do freezer ziploc bags, if you wanted to. That way you cook once, eat for weeks!

My mom sent me some recipes that seem pretty easy. I'm not sure how healthy they are yet, but at least I'd be eating real food! If I can cook them, I'll post them.

For some reason I've never been into freezing food. I'm not sure why. I guess I've always been afraid that somehow it will go bad. Which really doesn't make sense. So maybe I need to embrace the freezing.
